Sustainability
Sustainability and Wellness at Verily
A sustainable future for food service means flavorful food that’s healthy and economically viable for all, produced through practices that respect farmers, workers, and animals; nourish the community; and replenish our shared natural resources for future generations.
—Bon Appétit Management Company’s definition of sustainability
At Verily, Bon Appétit’s industry-leading socially responsible purchasing policies are matched with customized wellness and sustainability policies that put people and planet first. We’re proud to serve up delicious, sustainable, and healthy fare to the Verily community.

Our Standards
Wellness
- Healthy menu items are mainstream offerings throughout the café at Verily.
- No corporate recipes or pre-packaged meals here, please! Our chefs cook from scratch, using whole, unprocessed ingredients.
- Our menus emphasize the use of fresh vegetables, fruits, legumes and whole grains as a featured ingredient. Our first choice is to use locally and sustainably produced items.
- We have eliminated canola and soy oils from our café and micro-kitchens, opting instead for olive oil and butter.
- You won’t find corn syrup in the kitchens at Verily. Our team uses sweeteners like cane sugar, honey, and agave syrup.
- We do not use artificial colors or flavors in any of our dishes.
- While our micro-kitchens are stocked with primarily health-conscious food and drink choices, we do offer a small selection of indulgent options. We get it, sometimes you just need a Coke!
Sustainability
- It’s our goal to source 20% of our ingredients from local farmers and artisans. Some of our current partnerships include Hodo, Panorama Baking Company, San Francisco Fine Bakery, and Equator Coffee.
- We strive to serve only seafood that meets Seafood Watch® sustainability guidelines for commercial buyers.
- We prioritize animal welfare, only purchasing pork raised in group housing, without the use of gestation crates, as well as Certified Humane ground beef.
- We proudly combat food insecurity in our community by donating excess food to hunger-fighting organizations through our partnership with Peninsula Food Runners.
- Our chefs regularly source produce through Bon Appétit’s Imperfectly Delicious Produce program, which helps to rescue cosmetically imperfect fruits and vegetables which would have otherwise gone to waste.

Pursuing a Plant-Forward Future
Research continues to link eating more plants to better health for both our bodies and the environment. As a company, we are committed to a plant-forward future. Our chefs plate plants first, making them the star of the dish, while using meat and fish as strategic accents.
MEETING MANY NEEDS
At Bon Appetit, we plan café-specific menus and cook from scratch in each location. From simmering stocks to finishing sauces to roasting meats, our approach to food allows us to provide fresh foods from whole ingredients. Our approach allows guests to customize many café options to meet their personal dietary goals. We love to hear from you and can assist you in identifying your choices or even prepare foods to meet your needs.
Farm to Fork
Farm to Fork is a companywide initiative to buy locally, formalized in 1999. Our first choice is to purchase seasonal ingredients from small, owner-operated farms and ranches within a 150-mile radius of your café — at least 20 percent of every dollar we spend. Food grown locally is fresher, better tasting, and often has greater nutritional value. Our commitment to local food is about preserving biodiversity, protecting open space, supporting family farmers, and keeping money invested in your community.
